Cinco de Mayo Recipes
Have I mentioned how much I love Mexican food? It’s just the best! Cinco de Mayo is almost here, which means I’ll be making some Mexican dishes. I’m sharing my favorite go-to Mexican food recipes with you. They are simple and delicious!
Main Dish
One of my favorite enchilada recipes is from Real Simple. It is perfect for the warmer months, since it calls for summer produce. These Chicken Enchiladas with Green Salsa are full of flavor and the best part is you can make this meal in about 30 minutes.
Tacos are a staple in my home. Chicken tacos are made the most frequently, but I enjoy fish tacos as well. The Pinch of Yum has a recipe that you’ll want to try, Easy Chili Lime Fish Tacos.
You can’t forget about burritos! These have to be one of the quickest meals to put together. I like to make burritos for dinner and then everyone makes their own creation with the fixing of their choice. Everyone is happy when it’s burrito night. Click here for my own burrito recipe.
Sides
Elote is one of my absolute favorite side dishes! It’s amazing and when I find a restaurant that has good Mexican Street Corn, I’m in heaven! The Kitchn has a great beginner recipe for making the saught after Mexican side.
Beans are a great protein when it comes to Mexican food. I usually make black or refried beans when I cook. Isabel Eats has a simple recipe for refried beans that everyone will love!
Rice is an essential side if you ask me. Damm Delicious has a Mexican Rice recipe. I also like a cilantro lime rice and has the perfect recipe for you to try.
Grilled vegetables and a salad are additional sides that I highly recommend making when it comes to creating a Mexican meal.
Drinks
While, I do like a Mexican beer, it’s great to have a Margarita or a Paloma, too. The drinks are not only pleasing to the eye, but they are refreshing, especially in the desert.
